By the Way:
One on the range   PAN [Thursday morning quarterbacking: “range denizen” might be a better clue since the solver is not by “One” fooled into thinking it is a cowboy; denizen may do that.  Of course, denizen denotes people or animals, not kitchenware.]


Who knew?:
Beurre NOISETTE is hazelnut butter.  Problem is I'm not a gourmet, but neither were most of us from the city projects.   BTW, gourmand can mean glutton or gourmet, depending on context.
