Clueless Dairy

The theme is clueless, but why?  Change 44-Across to FARM (and 39-Down to GANG) and we are provided with a clue to the dairy theme.  Never understood why there are covert themes --- what's the point?

Junkyard dog    CUR [I believe only in some strata of England is a cur a watchdog, which a junkyard dog is.  In America, a cur is a lowly dog, which a dog guarding a junkyard is not.]
