How do I Export to .jpz in Crossword Compiler?

If you have CCv9, then go to File->Web Export-<Export to files. Select Java in Applet Type (bottom right), then zipped XML. You will be prompted to save an HTML file, but the process also creates a .jpz file of the same name. Previous versions I think had Java with optional zip. Just make sure you select zip.
